What is the dye for aside from just making the assassin suit different colors? Plus, I changed the color once and it changed back after a bit, is that supposed to happen?

Getting the Ivory and Ebony dyes will unlock the "Perfect Harmony" achievement. It's there to give you a bit more control over what you look like, instead of leaving you with just the Assassin's White. However, once you've unlocked Altair's Armor, your clothes remain a single color, no matter the dye.

I personally like the crimson. But i'm one tomb away from Altair's armor so once i get that none of the colors will matter.

There is another costume out there, but has to be bought from uPlay. It's an Altair skin, and with it, along with Altair's Armor, colors don't matter.
