I dont know if this has been brought up before but it seems like each shop has a certain amount of items in their inventory and once you buy it or whatever, its gone forever and its never replaced. for example, i bought steel armor from "best defense" in the imperial city. Its been nearly 2 ingame weeks and that merchant has not replaced any steel sets whatsoever, all he has now is iron.
Do the merchants ever restock their inventory or what? Cause if they dont thats ridiculous.

I'm pretty sure that they do. I think if they dont when you just wait, maybe you have to level up so that they get new items set to your new level.

I believe that basic items (foodstocks, drinks/potions, repair hammers) restock every week. More advanced items (armor, weapons, advanced potions (absorption, reflection, etc)) respawn monthly, I think. Unique items like Rahseda's Special don't respawn.
UESP Wiki should have more specifics, but I don't know where it would be. I'll look for it.

I just remembered this post, and thought I'd get back with my new info. armor and weapons do restock, it may be monthly as said above. But I've found that items like armor and weapons restock when I gain a level. It may just be because I have a mod that adds new weapons based on my level. I dunno, just thought it'd help.
