I have built the walls and got the guards, but how do i get more prisoners and guards and how do i keep them from escaping?

try doubling your fences and making sure the gates are locked behind them. guards can be attained by buying offices for them in the security building or buying guard towers. prisoners come every day at 11.00 am exactly all you have to do is make sure that you have enough beds in the dormatory. hope this helps!
