ok i think u have to get out of the animus while you are mid-mission(like when uve passed 2 of 3 missions but not completed the leved), sneak up behind him and take it out of his pocket.

press the empty hand key in low profile while from behind the target if he s locked on and is walking you cannot pickpocket while he is standing still
