yup - running into the same problem... apparently it's to do with the health option in the trainer... you get god mode monsters as well i guess. hoping that this gets fixed somehow.
Yeah i found out when i ran it with out the trainer. It seems to affect some monsters and not others.
Its happened to me with a BladeMaster. Turning the "unlimited health" option off doesn't always fix it either.
I find that the "Charge" ability of the BladeMaster can perform an instant kill type effect that ignores the hit points, so that can sometimes help. Not much use if you don't have that skill, of course.
Fortunately it seems to happen randomly, but it is a real pain in the arse when a monster you have to kill for a quest becomes invincible.
It also seems that if you leave the map/dungeon and then return, the monsters that were invincible (and had pummeled a lot) will have finally felt your blows and die.
I should point out that this is with the latest version of the trainer, 1.18074.70.4256 (32B DX9) operating under Windows XP Pro. This error was not present with the previous trainer I was using, which was 1.35.44.4020 (32B DX9). Hope this helps the trainer team.

What you have to do is disable the unlimited health option, then start shooting at the invulnerable creature! =) Well, or at least it worked for my Marksman. Kept shooting, didn't die. Turned off invincible, health went down. Still took more than normal hits to kill it off, but it DID die... =/
Running the same version trainer, with a SEA version with singleplayer patched to 1.18074.70.4256 (v1.2), using the DX10 version on Vista Ultimate SP 1. =/
