For grip, the first thing you want to do is adjust the suspension's tightness and ride-height, so that you loose most of the rolling.
Then you want to balance between roll-bar thickness, caster, and tire pressures. Adjust Toe if you need more turn-in grip on the front-end. Increase roll-bar thickness if it rolls too much making unpredictable rotation in turns (but not too high). Increase caster if it's not rotating as easy as you want in turns (at the expense of stability coming out of turns). And tire pressure I usually lower 2-3 notches, and balance it so the car has the proper balance of control in turns, and not too much sliding when going a tad into power-slide territory.
I'm going to be posting a savegame teaser in a little while, just to give you guys a few of my top tuned cars, before I give away my complete save-game. That should give you a chance to get your hands on some cars tuned to the max for control drivers. As in, you can forget about driving any of my cars with a keyboard or gamepad.

I don't tune my grip and drift cars and I am still winning. I simply max them to level 4. Really success depends on the car. Some are great handling, others are aren't so easy, and some are a nightmare. So long as you have a maxed out car that's easy to handle, you should have no problems winning. Personally,I don't feel the need to tune my grip cars and drifters.

I don't tune grip cars either. I just put the rims, bodykits, spoilers, that Power and Handling parts, paint some pics on it and done.I just then update the blueprint and i'm done and ready for racing..... I have EVO X and E92 M3 for grip and EVO X is much much faster and has a better acceleration than M3....

Really the grip and drift cars don't need to be tuned. I do just fine without tuning them.
