Fortuna is the left-most territory of the map. It has many turns, but most of them are on small angles, and easy to pass. There are a good amount of shortcuts, yet not as many as downtown (the middle territory where Kenji races). I suggest using these specs for your car : torque engine, middle transmission, middle suspention, drift tires, front brakes, velocity NOS, and middle Rpm Turbo/supercharger.
The canyon race vs. Wolf should be easy if you have those settings, but change the transmission to half-acceleration to get closer, faster. The tires can be ajusted to your liking, depending on how you race usually. If you use drifting on your turns, then put it on drift but if not, put it on grip.

Wow. Lemme think:
It's usually quite smooth (suprisingly) and with a few tight turns. In some races, they'll be a jump nearby a normal slope (take the normal slope, if you can ). Few bumps and also may have quite a few shortcuts, like the S bend shortcut (you know, the one with a booth thingy then another booth thingy) and the Uni shortcut.
I'd use Top Speed (just like Wolf), grip and maybe change these to give you just a bit more handling.
