Does anyone know if there is a way, or just a spacific file to edit the stats on units? Like defense, attack, shiled, missile, ETC..?

You can use the create unit cheat to make units with def attack and xp yhatyou want but this is a hard cheat to master the basic format is create_unit "name of settelment or general u want to give to caps sensitive" "unit name in quotes" "number of units" "xp of unit 1-9" "wepons quallity 1-3" "armor quallety 1-3" any artilery will need either an NE for Northern Europe SE for Southern or ME middle east. some times names of units are different than you see them there is an easy way to figure out by using custome armies but i can't remember look at preveous posts to find out hope this helped
P.S. please forgive my horrible spelling

Look very carefully at the export_descr_unit.txt file found in the Data folder. You should be able to work out what needs to be edited. Be aware that some units are used by more than one faction and always make a backup first.

Before you can see the file you have to edit, you first have to update the game to v1.1 and then "unpack" the game to create all the data files. Then to use the created data files you have to create and run the game from a .bat file. There are also two files that must be deleted before running the game or else it will crash.
Full instructions on how to do this can be found in a readme.txt file found after the update has been performed in game_folder\tools\unpacker.
The whole process can be quite daunting if you haven't done this sort of thing before!...
