So far I’ve found...

galley
war galley
cog
holk

...and you have to add them to an admiral not a settlement.

It seems that Cogs and Hulks (sometimes spelt “Holks”) were the only ships around from the 12th to 15th century.

and whats the cheat to create them?

You know with like artillery you have to put NE in front.

example:
create_unit London "NE Culverin" 1 1 1 1

You have to give them to an existing admiral. For the English it would be...

create_unit "Admiral Nigel" "carrack" 1 9 3 3
