I havent got this game yet as it is on its way from order but , when you are to play online or skirmish do you make ur custom army and fight till the last man ( my point is there is no buildings that build men right? i hope there isnt

yeah dude. you make your army using anything up to 30,000 gold. (same for both amries that are fighting) then you battle. in most fights its to the death but in seige u can just cover the flags. theres no "im losing, best make more men" so its just like it would be in a table top battle
