any class can learn any professions, but I would suggest getting at least one gathering professions, if your a mage smithing is going to be nearly useless, so take up mining and ENG, I myself was MIN/ENG until about 45 then I dropped mining for ALCH when I was financially stable.

the basic(most common) proffesions for mages i see are herb/alch and tailoring/enchanting
a lot of gnomes (especially warlocks and mages for some reason) take mining/eng. gnomes also can go up to 315 eng skill and you start off at 15. engineering is fun, if you have the money. herb is good gathering skill so you can make cash, swiftthistle, swift potions, ext. they all sell pretty good. tailoring/enchanting you can tailor your own greens+ then disenchant them to raise you enchanting skill so they kind of work together.
(like isomniac said, dont take blacksmith if your a cloth wearer, that's pretty much useless for a mage because you can't wear mail, or plate for that matter.)

U should do professions that suit u....so if ure a mage,lock and priest there is really no point in doing LW,BS and Eng but the things u should go for are Tal,Ench and Alch gnomes should go for Herblism aswell....not so much the warriors and Rogues but the rest is good.....should i say what good professions are for all classes and races????? that will take a while....if u want more info just PM me and ill giv u some tips and other stuff about the game...Ohh if ure wondering how i no so much....just 2 let u no Im a GM on a free server "Nifheims pleasure palace"

I agree to what people say above. Disregarding this i think it dosent really matter what proffesion you are according to your class. My hunter is a tailor/miner and i do fine with money and its fun enough... If you can't decide from the people have said above just pick what you think may be fun

yes i agree just pick basically what u want u might want to make ur own armor though so its liek this - pally's - mail armor- mining ans smithing - warrior - " " - " " - rogue- leather - skinning leatherworking - hunter- " " - " " - lock / mage - cloth - tailoring/enchanting, herbalism also herbalism might want alchemy
