Well, after race #111 there not really anything else to do unless you start a new game like i've done several times. Just play with the car mods and stuff. I always play around with the traffic and get into majour accident to make the car flip about 40 times. And another good thing to do is go to free ride and work on your manual skills. Put the car in manual and dont look at the green dot on when you shift, just go by the sound of the car. In about 1 month you'll have mastered it. Beacuse in real life, when you drive a manual theres no green flashing dot telling you when to shift so you got to know the exact pitch of the engine turbines to shift perfectly. (And thats the advantage of manuals, when you shift perfectly you get a small thrust leading to a speed up)

I couldn't agree more.. But you can get RPM gauges that hook up to your engine that come equipt with a red flashing light that tells you the exact timing to get a premium shift depending on your car's performance tuning. $70 from Bullseye or Supercheap...
