It's kind of hard to explain, but you need to slightly move the right analog stick either right or left, then move it down slightly, then finish the punch (either hook or uppercut).
For example, move the right analog stick slightly forward, then move it downwards (you shoud see your boxer raring back) then either do a hook or uppercut motion to finish the punch. BAM! Haymaker!!!
I think you can, also, get a One-Hit KO if you happen to counter your opponent with a haymaker.
