When activating "Unlimited health", the only effect is that the in-game timer pauses until unlimited health is deactivated again. It does not prevent your health (or any card) from turning fatigued on use.
This is also my experience. I don't think there is actually a health mechanic in the game as it's non-combat, so I'm not even sure what the option is supposed to do.
I think the main thing the game needs as a trainer is card duplication.

Well there is something called health in the game that drops with cards use so I made that stop and I had no idea it’s called timer.
