You check if the value in the editor is the correct number as you have in-game, then you change the value in the Editor. Press TAB to lock the new value in. After altering item quantity the visual changes takes effect after you either use or spend the item. please duly note it might not work outside of the mission for example when you're at Blacksmith yet it might also work.

XP is working as intended, but gold and silver coins have a double question mark when I see their value in Trainer. How do I see my in-game gold and silver coins in the trainer instead of the double question mark?
have you tried picking up gold? as far as i recall they're triggered when you pick up either gold or silver
