When I make edits in the editor such as health, fuel and the like I save it as a new file, but that file never shows up. When I save over the old file, everything is reverted back to what was before. I am not sure if this has to do with updates, but nothing works.

Steam cloud might override or revert your changes. Try doing your changes while the game is running and if that doesn't work, try while the game is closed. Also double check the savegame location. Some games have local saves in the appdata or document folders and cloud saves in the steam userdata folder.

Steam/settings/cloud
uncheck "Enable Steam cloud synchronization for applications that support it" box.

Ok, so I just tried editing while the game was running and my edits saved. However, the values have not changed in the game. I moved around a bit in game to see if it just needed updating... nothing. I tried exiting the game and loading the save multiple times, again no change. According to the save file everything is how I edited it. Oh, and cloud is disabled, as it has been.

Ask SeverusSnape on the CH discord, he knows about this game and editing saves.

As it looks like the save game editor is not saving at all I saved to a folder on desktop and the folder is empty...

Do you think why it's not working is due to the latest update to 1.1.6 or something else? Would it be possible to edit the save without the editor?

For me, it is working just fine. For cash and fuel, just remember to change all instances of the save file, there are more than 2 for sure.
