Any chances that this has offline Single Player? If so, do I have to d/c the internet or I'm okay to run it while connected to the internet?
Yes the game has offline single player. To be on the safe side I would disconnect from the internet if you're going to use the trainer.

Is there some other executable for this game? If not, then VR should have nothing to do with it..

When I replace the "starwarssquadrons_launcher.exe" file in the install folder the game will not launch. Origin opens after a few seconds, but that's it. I am using Origin Play Pro, and have attached the original "starwarssquadrons_launcher.exe" file.
Just to recap, I followed the instructions exactly, and replaced the "starwarssquadrons_launcher.exe' file in the main install folder with the one provided with the trainer download, and cannot get the game to launch.
Create a short cut of the modified launcher to the desktop and launch it from there. Don't use the origin "play" button to launch.
