Well, you mentioned only the options and I didn't mention the built-in editor. Just select Open Editor down below on the main trainer tab and the editor appears where you can change other values.
Good for health, bad for education.

OMG!! I posted earlier today that this trainer needed an update due to the game updating... but when I come back I find you've added an item editor too. Can't wait to try it 😀 😀 😀 .

Item editor works fine glad to say, just doesn't appear to save all the updated stats, e.g. I edited a load of weapons with movement, jump, made it epic rarity 100 and lvl 9999, set HP & SP to 99M and other stats to 2.1M, but when reloading it reverted to 28k ATK & SPD for a Fist weapon with 0 for all other stats (move, jump, crit retained the modded values though).
Might require a combination of the other hidden settings like number of kills etc, but for a first attempt it seems to be resetting to a capped value.... will have another play with it later. There is some logic in it's behaviour though, because fist weapons only usually come with ATK & SPD.
If the worst case scenario is that I have to run the trainer all the time, no worries there .

Item editor doesn't allow for the edits to be saved
Also HL increase doesn't work
Otherwise a pretty nice trainer
Can someone clarify: the mastery multiplier. What mastery is this affecting? Class? Weapon? Skill? Not sure.
Anyway, it appears that class proficiency XP is directly related to the gap difference between the character and enemies they are killing. The easiest way to boost up class proficiency is to make a high level thief using the editor (for example, create a thief that is level 8000) and have that thief create a box. Then attack the box with a character and destroy it (you will need that low level character to also have edited stats for atk and for hit or they won't be able to damage the box). The character will max out his class or subclass. Then you can either re-edit that character back to whatever it was or destroy it or whatever. I used this to unlock subclasses for recruitment.

Just to clarity regarding the item editor, it does not like its stats changed (guess it sticks to its defaulted stats)
However, there is some that do work:
Movement/counter/crit The level can be changed rareity Popular - but keep to its max 8
