UPDATE:
While I was invited into more investigations, with problems/bugs, on Epic Games Launcher, beside of crashes of the game(s), I found a bug, produced by a simple thing.
After even Microsoft-Support wasn't able to solve the issues, because it didn't depended onto Windows 10, I was forced to do some more stuff by my own.
Found a fix - install the Epic Games Launcher onto the "regular" install-path and not a deviating path. Some subroutings within the installer, are corrupt whats resulting into wrong registry-entries.
It's not a part of the troubleshooting guide of Epic-Support, but maybe it will, bc I've reported it today.
Now, I'll check if the game-stability was also interrupted by the deviating install-path.
Reinstalled the launcher today on it's regular install-path and finally "Epic Games Online Service" was possible to be installed, so I'm positive, that the games will run without a crash now.
Will get back in here, when I got more infos.
UPDATE:
Now, with activated CH-Trainer-Overlay, the game crashes the moment you've activate the trainer.
- With the Epic Launcher installed on a different drive, this option worked.
With CH-Trainer in the backround, the game crashes frequently and in different delays.
- That's it. I'll run a different trainer of an other publisher, until this one here is updated and crashes are fixed. Because the other trainers are working (now), even if they got less options as well as a different supported game-version.

UPDATE:
After - I tried different trobleshooting-guides of different sources ... I can report now, and it really not a joke!^^
UnrealEngine 4 doesn't like "next gen" grafic cards and the more If they are "Overclocked"! - My GFC isn't really Next Gen, but in sight of the age of UE4 it is.
My GTX 1060 with 6Gb GDDR5 isn't even listed in the Compatibility-List in one of the subfolders, in one of the Config.inies.
Best GFC I found was the GTX 8800 in there (LOL) - that's old huh?^^
I wrote in there the Device- and Hardware ID to increase a lil bit the compatibility, but the problem is, that in fact the performance of my "old sweety" is tripple as high as the performance of a GTX 8800 and this without Overclocking ... so, it's maybe too much or a lil problematic to handle?
Deactivated 3D-Acceleration on my Afterburner and now the game seems like to run stable.(?)
Because of so many different issues and ways with "try and error" to fix the problems, I'm seriously not sure, that I "really" found the problem?
- It's confusing ... Unreal Tournament 3 runs great without crashes and with overclocking ... I don't get it.^^
- IF you got problems - do not overclock your GFC and try it.^^

LAST Update:
After 4hrs of gameplay with the Cheathappenstrainer in the backround and with the overlay activated:
Game is running - IF - I do not use 3D-Accelerated Overclocking on my GFC. Game doesn't crash with CH-Trainer in the Backround as well - IF - I don't overclock.
Game doesn't crash even if the overlay of the trainer IS active.
-BUT-
All the attribute-cheats aren't working anymore for me.
