How does one go about rolling back GRW to the previous version the trainer worked on? And then making sure it doesn’t update.

You would need to have a drive image of the drive it's on (or a data copy) of both the game folder, Uplay, and perhaps the registry. I'd go about it by manually deleting all the files in any Uplay folders and GR:W folders, then extract and copy over all the older files from the backup image.
Once that's done, manually firewall all .exes associated with both applications. A third party firewall would likely be the easiest way to do that. Ideally that should do it. If not, you're looking at rolling your whole system back to that specific image point. If that's needed you'd have to execute a differential backup, roll back the whole system, then roll up everything except the GR:W relevant files and registry info.
Once I've finished the landscaping around my house I'll give this a try and report back. Figure middle of next week.

Please read at least the last few posts on this thread and you'll find the answer already. No, you cannot roll back to an earlier game version.
game is unretired, trainers have been updated and new trainers will be posted in the morning.
