I've got no idea for energy, I'm assuming that the game figures that out every few seconds (or possibly called every time a building is built/changed) and so there may not actually be a variable you can change for it.
If you left click on the planet icon (right click opens the planet) then it will give you a list of the top three complaints that the planet has, as well as some tax options that you can set to make people a bit happier (who needs tax when you hacked in 50 billion credits?).
I have found that a jump like you did is too extreme for the game however, and the planet will almost instantly revolt. Try increasing the population by say 10K. Doing this and then leaving it for a minute or two (possibly to do the same to another planet) allows the auto-build to catch up with the sudden increase in pop. You can also build the buildings you need before updating the population, don't worry if they're unmanned the pop cheat will fix that.
This guide: *Link removed* has information on a great many things in the game, including exact building numbers (housing, food factories, emergency services etc.). That should be the last key you need to build your mega-cities.

As for cosmos, no. The variable it finds is not for the selected planet (well, it kinda is) but for that planet in the game. It will always point to that planet even across the whole galaxy, so you have to find the variables for each one. That being said, the planets are stored in the same place every time. If you figure out the offset for a particular planet, that's where it will always be in memory, over every game, with every race. The only things that may change this is if you play maps with less planets (some scenarios have less) or it may change if there's a patch. Trainer makers, take note.
This was posted in a separate comment because the sites automatic attack protection triggered when I had it all in one. Too many keywords I suppose.

youre right i tested it the way you said and your idea works. you have to build up the planets step by step but this is really hard to do. i do not remember any more what traier oder editor i used in the past all i could remember are the options for energie, people and the most awesome option overall happines for all planets as long as you got the option working. if you forgot to activate it at the beginning when you loaded the game your civilisation gone to waste and all your planets revolt in one second^^
the key factor for these options is that you DONT have to build mega cities. you can keep them small with just science and building facilities and thats awesome for your overview about the galaxy. with my savegame at the moment i got 7 planets and the problem that every 15 or 30 seconds i have to build new buildings on every planet but "DO" thats the game i think
energie will get alot better with the later energie buildings so does the sciene. i will keep the number of planets i colonize as small as possible for the beginning i think but the greatest problem with that is the scanner range

for those who got the bug where you cant attack ships/planets or even putting fleets together automatically.
to attack use strg rightklick or in the steam forum there is mentioned to save and restart ( not just reload ) the game till its works.
i hope they will fix this fast ist so nerfwracking
