I think I found a possible work around for my issue...
What I did was reinstall EAC as it should be, which I still had the same issue with it crashing at the splash screen. When it failed, I ran the game using the Steam created shortcut, which got everything starting, and when it started to load the fake login, I ALT + F4 out of the game, then started the trainer, following the given instructions, and it loaded correctly with the EAC error and all... hope this works for others as well, and good luck.

I added the command to WD2 shortcut, but a message pops up in STEAM asking me if I want to ok that. Can command just be added to Steam Game Properties launch options instead of Desktop Shortcut? If yes, what do I put as command in launch options under game properties in Steam? Thoughts appreciated
UPDATE: I was able to get EAC disabled just through Steam. I didn't use a desktop shortcut or Launch Options in UPlay. I added the following in Launch Options under game Properties in Steam: "-eac_launcher -launcher_restarted". I didn't start a save or new game, but I did get the EAC disabled message when I booted/started game through Steam. Hope this helps you guys also
Side Question: How do I know for sure if Online mode is really disabled?

If you are uncertain pull the plug or set your firewall to block all traffic during gameplay.
And ofc set the Uplay client to offline mode Link.
