So i advenced in the game and find some other addresses : Link

Blitzball :
Score left team : change score of opponent
Score right team : change your score
SH point : block to 0 to make all shoot fail / block to a high number to always succed
PA point : same as SH but for passes
Both work no matter who as the ball (your team or opponent)

Lightning :
CURRENT CHAIN : change this number to one under the number needed to gain an item (ex 49) then avoid a lightning and go to Rin to get your reward.
The 3 other are here only to change stat in the book in rin shop.

Butterfly :
STOP TIME 1ST ZONE : first lunch the butterfly mini game (wait until the counter appear) and then block this variable you will have all the time you need to finish the mini game (count go until 0 and then block)
STOP TIME 2ND ZONE : same as first zone
i've tried this two cheat both with 40 and 30 seconds challenges seems to work.
ps (don't edit "WHERE TO FIND BUTTERFLY..." that a reminder of where i easily found the variable in the code if you edit this game will probably crash)

I will probably add more as i advance in the game

Gil can be edited by CoSMOS easily, or by using the built in cheat to max Gil

No Encounters can also be used via the Built in cheats

Theres really no reason to add either to the trainer when the game has built in cheats for them.

And no, using the built in cheats does not disable achievements in any shape or form, incase you were wondering.

It's already in the game, press F3 to alter the encounters settings.. Press Esc in game to add gil and items

Also another question, can the X-2 trainer work with X-2 Last Mission? I want a answer for this question before I try the X-2 trainer with Last Mission.

Chocobo :
You can freeze time for all the trial (seconds and milliseconds variables) you also can edit the number of balloon/birds tidus and the trainer collect in the last round make sure to freeze the variable before the beginning of the race cause you can't pause game until the race is done and editing variables after it end is useless.
If you freeze time for the race tidus and the trainer will both make the same time no matter who arrive first and will be settle with the birds and balloons.

How do you use the .CT files that @kyrillin has posted above?

Works beautifully. Used it to get Lightning and Butterflies.

Can't wait until you add something for the Chocobo Trainer race in the Calm Lands.

You need to install CoSMOS it's a program used to search in other program memory and create homemade trainer.

Also i added the address where stored all monster number for the monster quest. I'm not 100% sure all monster are in the array cause i technically not have access to all area on the quest map but I've got the item you got when you fulfill the quest. so if you change this array to make all value to 10 that should work for you too.
Try not edit this until you've at least talk to the quest guy once i have no idea what will happen if you try editing before that.

EDIT : If you make all monster to 0 after fulfill the calm lands monster quest the game will freeze . So after this point you need at least 1 monster.
