Have you had a look around over at Wide Screen Gaming? If you don't already go there, that is the go to site for resolution fixes. Check the boards often and look around through the different board. I have used resources from there for a couple of years for and there are some crafty people on there.

Does anyone know a way for me to play without using widescreen, like maybe a command line in steam?

...you can enter custom resolutions in the Fallout4Prefs.ini file located in your documents folder. (C:\Users\YourPC\Documents\My Games\Fallout4)

iSize W=YYYY
The UI doesn’t scale, so keep that in mind, but you can always turn it off just to ogle the landscape with by pressing the tilde key (~), typing “-tm”, and hitting Enter. Don’t expect a stable environment with custom resolutions. Anytime I tried to take a screenshot with FRAPS, the game crashed immediately.
