The chance to get a crystal is based on the monsters chance to do so, some have a high % while some rarer types have a low 1-5% chance to get one.
Like the Metal Gigantaur etc
To dominate at chocobo racing, you need specific rare types of monsters to infuse into a golden chocobo (you get it in chapter 5 once you get Mog back and is hidden in 700 AF map to the north west). So having the easy kill option is nice for farming them.
EDIT: There is a fragmant skill later on that gives you easier crystal monsters too. Which boosts the % chance.
