The option in Windows Features does not actually uninstall IE. It just removes the shortcuts making it difficult to launch (you can still launch it from it's respective location in the WINDOWS directory.
You will need to go into your Windows Updates and rollback IE to version 9 or less by uninstalling the respective updates here (uninstalling the IE11 update will roll it back to version 10, 9, or 8 depending on if these IE versions were applied when you performed their updates).
