Quite possibly the Sage.
He was missing an eye remember, which would have easily been recognizable if he had his different colored eye intact. His facial features also is very very close to the Sage.
Not to mention he knew how to use the Apple fully at the end of AC1.
Does this mean, Altair, Ezio (not Enzio like the voice actor says in one of the Abstergo videos about not selecting him), Connor, Edward, Desmond and possibly our new protagonist where the same person like the Sage but just can't remember who he is each time he is reborn?

I agree with your theory on Al-Mualim's possibility. As for the others stated, I am not sure ... shall your theory be valid, they should "remember".

Ezio's uncle Mario had also a missing eye and seemed to be protecting Altair's valuables etc, so Mario could have been the Sage also.
As for the others not remembering if they are indeed an ancient like the Sage, it could be a problem when someone else used a subject to be future vision seeing assassin's, i.e. it wasn't Juno who did it, because she knew the technology very well.

I don't know about the missing eye(s). Ubisoft seems to modify and expand the story a bit with each new title. Remember in ACI where Lucy was missing a finger (because supposedly all assassins cut off their ring fingers), then in ACII Da Vinci jokes about modifying the hidden blade so it wouldn't take off Ezio's ring finger?
I think you're onto something, though. When you go to hack the mainframe, Juno calls your character "cipher," a term that (I think) she also calls Desmond at one time.
This leads me to believe that characters like the sage and the ciphers were "coded" into the future by the precursors to fulfill a purpose. So, while Al Mualim might not have been the sage, he may have been another cipher -- or calculated variable -- put in place by the precursors.
All in all, I'll be very happy to see where the whole precursor story ends up going. Ubi is making it pretty tantalizing, I'll say that.
