The throwing knifes are bugged on the pc version. We do not have the "weapon wheel" like consoles do and if the knife isn't thrown immediately prior to selecting another weapon, one cannot re-loot/steal a knife again.
Hence, they are bugged and non-selectable.
This user just posted a possible solution to the problem on the ubi boards. Perhaps it might solve the problem.Link
Actually, no. This user is using the PC version and not having any problems looting or reselecting the knives. Granted, I'm using an xbox360 game pad to play it. On a rig that's far beyond the recommended specs
But it works fine... On the PC version....

The knife bug occurs when using keyboard/mouse as the inventory cross selector you use on the gamepad is not available in keyboard mapping, hence why keyboard users cannot reselect the knife properly (no key for it at all).
I hope this clarifies the issue, also the fix to apply the cross selector to the numpad does work.
You don't loot it like you do with ammo,
the knife drops on the ground so you have to look for it and pick it up like any other weapon. (Swords, axes etc.)
THAT is what I meant ... I cannot "pick-up" those knives despite I have the trainer off ... not even with the save-file that I never used the trainer with.
