Has anyone been able to work out where the editor moves your save file to after you edit it ? (I made a back up first obviously) but it seems to be deleted from your saves folder after you save the changes and launch the game.

I think the Steam version checks whether the save file is valid; if not, the file is removed (or ignored) from the folder. Since the editor on CH was released back in 2005, it may likely not be able to save edited files in a manner that is compatible with the later Steam version.
I'd recommend trying out the "Black Chocobo" editor:

So many guys say the Savegame Editor dont work... I try to explane i hope you understand my bad english.
1.Download the Savegame Editor. 2.Unzip the .exe and the .ing to C:/user/username/Dokuments/Square Enix/Final Fantasy VII Steam/user_XXXXXXX 3.Run the .exe and edit your savefile, befor you close the editor save your file. 4.Make a copy of your save file at the Desktop. 5.Run FF7, nor there are a sceen with Online-Profil...klick play 6.Now FF7 is running and there is a screen with your keyboard (now steam delete your savefile because its not the same save file in the cloud) now press the OK button. Now you can coose New Game or Load Game. Press Alt+Tab to get back on Desktop 7.Now take the save file form your Desktop and overrigth the steam-cloud-createt savefile, switsch back to game and load your edited savefile.

Its easier if you aren't using Cloud saves.
Run the game Goto the Load save screen, DO NOT load your save Run the editor and make your changes and save it Go back to the game THEN load your save Save your game after it loads
Doing it like this bypasses the metadata checksum, which is what deletes your save if the data doesn't match up. -
Its always a good idea to backup your saves into multiple slots before you edit just incase.

Get the Black Chocobo it's much better and user friendly and he/she still adds to it and updates it from time to time as well.
