This is how editing my pro worked for me:
1) Create new pro.
2) Change everything you want to change and leave the "Physical" tab for last.
3) Highlight "Height" and press Numpad 7.
4) Change the height, weight, constitution and preferred foot. (Do not modify the other physical attributes.)
5) Press Numpad 7 again and then Done.
Did you try that out on online pro or career pro because i tried this on the online pro and it didn't work.

I tried it in career mode but it works online as well (at some extent). The changes to the physical attributes don't get saved, they reset to the default once you're done editing, it's server sided, but you can still have a 7'5 player with decent stats if you follow the steps.
