I like how it returns gradually in Assassin's Creed, and how it's not really health but how in sync you are with the ancestor. Of course I find the whole concept of the animus extremely clever.
I'd like to see a health system where they regain life by destroying their enemies. Invincibility is granted for a limited time if they first kill the enemy's loved ones, bonus health for ripping out the enemy's heart and placing it in the hands of their only surviving child.
Kidding. I wouldn't mind a game where they regain health based on taking various medical supplies or picking up hearts.
Picking up hearts you say? You know like Zelda? Also, rather good comical spoofs involving actual hearts.

Sonic, with the rings. You could go on forever without being killed... as long as you didn't get hit twice in a row before picking up more rings or some of the ones you dropped. Also once you got 100 you got another life or something. Of course I only ever played Sonic 2 so not sure if it's the same in the others.
It's the same with the newer games, at least up to Sonic Unleashed. I'm not sure after that but I think it's safe to say it hasn't changed.
I don't really have a game with a 'best' way of regaining health. I did like Sonic, because, of course, as long as you have at least one ring, you're pretty much invincible.
And in Left4Dead, I liked using pills to temporarily boost my health. The health packs were neat, because I'm 99% sure that they're using sticky tape, and I think that's neat, because in a zombie apocalypse, you'll have to be resourceful anyway, especially since most medical supplies have probably been looted anyway.
