Kingdom Hearts 2 was really easy. Long, but easy.

Peter Jacksons: King Kong- Probably the easiest 1k gamerscore i've had.

Empire: Total War (in comparison to other TW's, also depends in the faction you're playing with).

Every Need for Speed game I've ever played. It offers no challenge whatsoever, easiest racing series I've played.

Saint's Row 2:A hundred cops shoot you,you stand up and kill them all!
Prototype,the first 50 percent of the game is amazingly easy that you cannot lose!The rest is not as hard as the beginning of any other sandbox game.
Need For Speed:Underground 2,the whole game is about "choosing the right car and customizations" nothing challenging during the races.
Disney games,(and other cartoon based games)each of them have one or two challnging parts,but eventually,they're easy as hell.
