Does anyone know of a way to stop the game from moving into the next age; for example, I want all civs to stay in the Medieval age. Don't see any control for this in the mod mode.

Progression is caused by tech research. You could go into the tech files and eliminate the part of each technology that is releated to triggering the advance of ages.
I don't know the specifics, but I know that's where to look first.
