I set steam not to update this game but instead of updating at update release it updates when I run the game! How do you stop it from updating AT ALL?
You can't. Steam really needs to add some more options to how games update and what times you want them to update but they won't.
The way it works is this - you can disable automatic updating for any game in your Steam library and it will never update. But if you play that game once, it will think you want the updated version and will re-establish automatic updates for the game which really sucks. I wish Steam would let you control game updates fully but they won't citing they want everyone's game on the same version as to minimize conflicts - mostly with multiplayer games. They also won't allow users to control what times games update which really sucks for people who have bandwidth limits. Games today are multiple gigabytes in size (Max Payne 3 is 30+ GB in size alone) and there's been many times when games like Max Payne 3 or COD Black Ops 1 and 2 will update 10, 20, 30 GB of data to my hard drive eating up my monthly bandwidth limit of 100 GB per month. Anything over that and I have to pay %0.50 per gigabyte over my 100GB max cap for the month which leads to hefty ISP bills when games on Steam are updating and your kids are watching movies on Netflix 100GB gets eaten up very quickly. I only get free bandwidth between midnight and 6am so this is the time period I want Steam to do updates as to not eat away at my monthly cap. I wish Steam would give users more control over their games but for some reason they won't. Some people have invested in bandwidth limiters but they are a hassle when dealing with Steam. Some won't let you access Steam until you shutdown the bandwidth limiter program and then Steam slams you with tons of backed updates immediately. It's just a headache all around.

Who can help you you're caught in a squeeze between two selfishly competing interests.
On one hand you have steam whose market share of game sales is so large they can do as they like and everybody has to wear it & on the other hand you have Cheat Happens whose market share of the game trainer business is so dominant they can do the same.
I realise that everybody needs a holiday. I am on one this weekend and looked forward to playing Van Helsing. No chance there.
Of course I didn't dream of taking my break unless I was sure I had left someone on hand who could cover for me. I have gone to great trouble and expense to train a young bloke to do most of what is required so that I can take holidays. If I didn't all the medical & dental practitioners who depend on my service to keep their ICT up to date and running would flick me in a flash. It appears not all businesses are required to be that diligent.
man I don't know where to start. if I wasn't so tired id actually be ticked off by your grandstanding tirade message. I may have been OUT OF TOWN, but I am never really 'on vacation'. Neither is chris when he is out of town. The site is under watch and support no matter where we are. I sent multiple trainers while out of town to chris to post, including TWO updates of this TURD OF A GAME van helsing since Thursday which updates every 12-24 hours. most of the time I either work very early in the morning or until super late at night keeping the site updated with the trainer updates that are completed in priority form. this 13 dollar broken game that has patched 10+ times in 2 weeks isn't a priority. philsin you don't have a clue about me, what I do, and how much of a workload I take care of, which includes RUNNING MY OWN DENTAL OFFICE and have done so for 20+ years along side cheathappens.
a quick glance and I see I sent TWO van helsing trainer updates since Thursday as well as 12 total trainers that were updated since I left Wednesday for a weekend trip with my wife. in fact I left about 5 hours later than i wanted to on wed. because I was working on wargame airland battle and I knew the members would be pining for a trainer for it (which it already patched and I sent updated trainer for that game while out of town as well). this is on top of my 'day job' as a dentist.
the bottom line is this.. i have made priority timely postings of van helsing and many other game trainer updates while on vacation. cheathappens is dominant because we provide the most content at a reasonable price and support our trainers through patches and for multiple versions better than anyone else, even while we are 'on vacation'.
if you want to make this dink broken 'van helsing' the game that made you angry that i didn't update immediately upon hearing that it patched for the 15th time, that is YOUR right. however, calling me selfish or claiming that cheathappens doesn't care about our members is simply untrue, and you are making enemies where there didn't need to be.
for all your talk as if you are some sort of business guru and just how 'diligent' you are with support, perhaps you might collect a little more information about the people you insult next time. that is one of the keystones of business relationships and people like me remember stuff like that down the road. i wont make assumptions about YOU like you did with me, but i will say that many people simply couldn't handle what chris and i do day in and day out.
sorry to be so blunt and personal with this, but frankly you asked for it. perhaps you can find a 'bloke' to help you write your forum messages and to help you be a little more cautious with your selection of words..
