I found a QuickBMS script for a different game that, with slight modifications, can extract the .pak files at least partially. Data0.pak seems to have a different format though, so the script can't extract that, and most of the files it extracts are some .block or .bin files. But anyway, I'm posting it here in case anyone is interested. Might be useful for... something.

If you extract basedata.pak, you will find a file there called sbpacker.exe . It seems to be a packer/unpacker for the game.
I hope this will lead to more experimentation.

Okay...getting progress in here.
I've managed to unpack everything I need, and have located the Difficulty settings file
Now I only need to know how to make the game use the new file without repacking it with the rest of the 212MB archive (so I can send it to you guys).

In the demo I noticed there's a console, did you find a way to enable it? I was able to make it show up with a bit of hacking but couldn't enter any commands or do anything with it...

You mean other than the Debug-Menu where you can set the time of day, if it's raining, and give yourself levels/xp?

Yeah, I mean a real console where you type commands and stuff. Maybe there's a way to enable it in some .ini file, like in Gothic 3.
